What does the cost of sales ratio say?

The quota shows what percentage of the net sales price is accounted for by the ingredients used. To do this you need the ingredient costs per serving and the net sales price.

In the pre-filled example, the ingredients cost 3.76 euros per serving. With a net sales price of 12.90 euros, the cost of goods sold ratio is around 29.2 percent.

This turns the purchase price into a value per portion.

The invoice is only correct if your purchase prices and quantities are correct.

What does the cost of goods sold calculator calculate?

The calculator adds the costs of the ingredients used, divides them by the number of portions and relates the costs per portion to the entered net sales price.

Do I enter net or gross prices?

Use net purchase prices and a net sales price. This means that the calculation remains comparable to the business cost of goods sold ratio.

Which target value is right for my restaurant?

There is no one value that fits every concept. Determine your target quota based on your own cost structure and, if necessary, coordinate the complete calculation with your tax advisor or business advisor.

Are staff, rent and energy included?
